Seekh Kabab (শিক কাবাব)

Ingredients:
  1. Bone less beef-2 lb(thinly sliced)
  2. Red chili powder-1 ts or according to your taste
  3. Cumin powder-1 ts
  4. Coriander powder-1 ts
  5. Garam masala powder-1 ts
  6. Ginger paste-2 ts
  7. Besan(gram flour)-3Tbs
  8. Plain yogurt-1 and 1/2 Tbs
  9. Lemon juice-2 Tbs
  10. Tikka seekh kabab masala-2 Tbs(optional)
  11. Oil-4 Tbs+ oil for brush
  12. Salt-1 ts or according to your taste
Procedure:
  1. Clean and wash meat and drain water. Put all the ingredients into a large mixing bowl and mix well.
  2. Cover the bowl and put it in refrigerator. Let it marinate for overnight.
  3. If you use bamboo skewers, soak the skewers into the water for few minutes.
  4. Skew marinated meat to the skewers closely. Take a baking tray. Spray or brush oil on it. Place the skewers on the tray and again brush little oil on meat.


  5. Preheat oven 400 f. Place the tray in the middle rack of the oven. Bake it around 20-22 minutes. Then flip the skewers and bake another 20 minutes. If you want more burn you can keep few more minutes.
  6. Remove from the tray. Enjoy with parata or naan.

Different Ways to Cook Beef (ভিন্ন স্বাদে গরুর মাংস)

Ingredients:
  1. Beef-2 lb
  2. Rice flour-1/2 cup
  3. Onion-1 cup(chopped)
  4. Onion-2 Tbs(paste)
  5. Turmeric powder-1 and 1/2 ts
  6. Red chili powder-2 ts or according to your taste
  7. Cumin powder-1 ts
  8. Coriander powder-1 ts
  9. Garam mashala powder-1 ts
  10. Ginger paste-2 Tbs
  11. Garlic paste-2 Tbs
  12. Cardamom(elach)-5-6 pieces
  13. Cinnamon stick(darucini)-3-4 pieces
  14. Bay leaves(tejpata)-4 pieces
  15. Cumin seed-1 ts
  16. Green chili-5-6 pieces(slitted from middle)
  17. Oil-1 cup
  18. Salt-2 ts or according to your taste
Procedure:
  1. Cut beef into medium size. Wash and drain water.
  2. Add all powder and paste ingredients (except rice flour) and salt to the beef. Mix well and keep it around half an hour.
  3. Heat 1/2 cup oil in a pressure cooker. Add cardamom,cinnamon stick and 2 bay leaves. Stir for a while. Add 1/2 cup chopped onion and fry until tender. Add beef and stir well. Cook until all liquid evaporated. Add 1 cup hot water and bring it to boil. Cover the pressure cooker with lid and wait until 4 whistle comes out or around 15 minutes.(different pressure cooker varies time).
  4. Allow to cool the pressure cooker. Remove lid from the cooker. Add 4 cup hot water and bring it to boil. Take a bowl. Add 1 cup hot water in it and then add 1/2 cup rice flour. Mix well. Then slowly add the rice flour mixing water to the beef. Stir continuously to prevent burn at the bottom of the pan. Cook around 2/3 minutes. Then remove the cooker from the burner. 
  5. Heat remaining 1/2 cup oil in a deep pan. Add 2 bay leaves and 1 ts cumin seed and stir for a while. Add remaining 1/2 cup chopped onion and fry until turn brown. Add beef to the pan and stir. Cook around 5 minutes.
  6. Remove from the pan and serve hot.

Beef With Whole Spices(কাটা মশলায় গরুর মাংস)

Ingredients:
  1. Beef-2 lb
  2. Onion-2 medium
  3. Potato-3 medium(cut into 4 pieces and lightly fried)
  4. Whole red chili-8-9 pieces or according to your choice(slited from middle)
  5. Ginger-2 Tbs(finely chopped)
  6. Garlic-2 Tbs(finely chopped)
  7. Cumin seeds-1 Tbs
  8. Cardamom-6-7 pieces
  9. Cinnamon stick-3-4 pieces
  10. Bay leaves-3 pieces
  11. Plain yogurt-1/2 cup(optional)
  12. Oil- around 1/2 cup
  13. Salt-1 and 1/2 ts or according to your taste
Procedure:
  1. Cut beef and wash properly. Drain water. Add ginger,garlic,yogurt and salt to the beef. Keep it for marinate about an hour.
  2. Heat oil in a pan. Add cardamom,cinnamon stick,bay leaf and cumin seed. Stir for a while. Then add onion,whole red chili and stir until it turns light brown.
  3. Add beef and stir well to coat with all spices. Cover the pan with lid and cook until all liquid evaporated. Add fried potato and stir around 5 minutes.
  4. Add around 4 cups warm water and cover the pan with lid. Cook in low heat until beef become tender.

Achar Mangsho (আচার মাংস)


Ingredients:
  1. Beef-1 kg
  2. Onion-1 cup(chopped)
  3. Red chili powder-1 ts or your choice
  4. Turmeric powder-1 ts
  5. Ginger paste-1 Tbs
  6. Garlic paste-1 Tbs
  7. Cardamom-7-8 pieces
  8. Cinnamon stick-4 pieces
  9. Bay leaves-4 pieces
  10. Panch foron-3 ts
  11. Tomato-2 large(finely chopped)
  12. Plain yogurt-1/2 cup
  13. Mustard oil/ oil-around 1/2 cup
  14. Salt-1 ts or your choice
** You can also use ready achar mangsho mashala pack.
Procedure:
  1. Cut beef medium size. Wash and drain water.
  2. Heat oil in a deep pan. Add cardamom,cinnamon stick,bay leaves and panch foron. Stir around a minute. Add onion and stir until onion become light brown. Add the rest of the ingredients and stir for few seconds. Add beef and stir thoroughly to coat well with all spices.
  3. Cook until all liquid evaporated and oil comes  out by the side of the pan.(when liquid reduced,stir continuously) Add around 3 cup water.Cover the pan with lid and cook in lower medium heat until meat become nicely tender and liquid looks thick and gravy.(you may also use a pressure cooker. If use, add around 2 cup water and bring it to boil. Cover it and cook in medium heat around 15-18 minutes.)
  4. Serve your beef with khicuri or parata.

Beef Liver Curry(কলিজা ভুনা)


Ingredients:
  1. Beef liver-250 gm
  2. Tamato-1 medium(cut into small cube)
  3. Onion-1 large(chopped)
  4. Turmeric powder-1/2 ts
  5. Red chili powder-1/2 ts
  6. Ginger paste-1 ts
  7. Garlic paste-1 ts
  8. Cumin powder-1/2 ts
  9. Garam mashala powder-1/2 ts
  10. Cardamom-3 pieces
  11. Cinnamon-2 stick
  12. Oil-3 Tbs
  13. Salt-1 ts or according to your taste
Procedure:
  1. Cut liver into small pieces. Wash properly with warm water. Drain water and keep aside.
  2. Heat oil in a pan. Add cardamom and cinnamon stick and stir for few second. Add chopped onion and fry until tender.
  3. Add the rest of the ingredients except liver and tomato. Stir in lower medium heat around 3/4 minutes.
  4. Add liver and coat with all spices. Stir until all liquid evaporated and oil start to separate from the side of pan. Then add warm water and cover the pan with lid. Cook until liver become tender.
  5. Then add tomato and cover the lid until tomato become soft and your desired gravy comes out.
  6. Turn off the heat and serve with roti,parata,naan.

Minced Beef Curry(কিমা কারী)


Ingredients:
  1. Minced beef-250 gm
  2. Potato-2 medium(cut into cube)
  3. Onion-1 medium(finely chopped)
  4. Tomato-1 small(finely chopped)
  5. Red chili powder-3/4 ts
  6. Turmeric powder-1/4 ts
  7. Cumin powder-1 ts
  8. Ginger paste-1/2 ts
  9. Garlic paste-1/2 ts
  10. Cardamom-4 pieces
  11. Cinnamon stick-2 pieces
  12. Yogurt-1 Tbs
  13. Coriander leaf-1 Tbs(chopped)
  14. Oil-1/4 cup
  15. Salt-3/4 ts or according to your taste
Procedure:
  1. Heat oil in a pan in medium heat. Add cardamom and cinnamon stick. Stir for few seconds. Add chopped onion and fry until it turns light brown.
  2. Add minced beef and stir. Add all other ingredients and stir. Cover the pan with lid. Cook it until all liquid evaporated or oil comes out by the side of the pan.
  3. Add cubed potato and stir around 2/3 minutes. Add 2 cup water.
  4. Cook until potato become tender and liquid evaporated. Add coriander leaf.
  5. Serve with naan,roti or parata.

Beef Cabbage Curry


Ingredients:
  1. Beef-250 gm(boneless)
  2. Cabbage-500 gm(chopped)
  3. Onion-1 large(finely chopped)
  4. Green chili-4 pieces
  5. Red chili powder-1/2 ts
  6. Turmeric powder-1 ts
  7. Cumin powder-1 ts
  8. Coriander powder-1 ts
  9. Garam mashala powder-1/2 ts
  10. Ginger paste-1/2 ts
  11. Garlic paste-1/2 ts
  12. Cardamom-4 pieces
  13. Cinnamon-1 sticks
  14. Cloves-4 pieces
  15. Oil-6 Tbs
  16. Salt-1 ts or according to your taste
Procedure:
  1. Wash and chop the cabbage and keep aside.


  2. Cut beef into small pieces,wash and drain water.
  3. Heat 4 Tbs oil in a pressure cooker to a medium heat. Add cinnamon,cardamom and cloves. Stir for a while.Add 1/2 chopped onion and fry until it turns brown.
  4. Add red chili powder,1/2 ts turmeric powder,1/2 ts cumin powder,1/2 ts coriander powder,ginger paste,garlic paste,1/2 ts salt and stir.
  5. Add beef and stir until oil comes out. Add 1 cup water and bring it to boil. Cover the pressure cooker and wait for around 7 whistles to come out or around 15 minutes. Then turn off the heat and set it aside.


  6. Heat 2 Tbs oil in another deep bottom pan. Add remaining onion and stir until it turns brown. Add all remaining ingredients except garam mashala powder. Stir for few seconds, then add cabbage. Cook it for around 5 minutes.
  7. Add beef in the cabbage and stir.
  8. Add garam mashala powder, if needed add 1 cup of water. Cook it for around 10 minutes or until total liquid evaporated.
  9. Now beef cabbage is ready to serve.

Beef Kofta Curry(বিফ কোফতা কারি)

Ingredients:
For Kofta :
  1. Minced(keema) beef-250 gmOnion-1 medium(chopped)
  2. Turmeric powder-1/2 ts
  3. Green chili(chopped)-2 Tbs
  4. Cumin Powder-1/2 ts
  5. Garam mashala powder-1/2 ts
  6. Ginger paste-1/2 ts
  7. Garlic paste-1/2 ts
  8. Coriander leaves-1Tbs (chopped)
  9. Breadcrumb -1/2 cup 
  10. Egg yolk-1
  11. Oil-4 Tbs+ 1 cup for fry kofta
  12. Salt-1/4 ts or according to your taste


For Gravy :
  1. Onion paste- 2 Tbs
  2. Ginger paste-1/2 ts
  3. Garlic paste-1/2 ts
  4. Red chili powder-1/4 ts
  5. Turmeric powder-1/4 ts
  6. Cumin powder-1/2 ts
  7. Cardamom-2 pieces
  8. Cinnamon-1 stick
  9. Clove-2 piece
  10. Bay leaves-2 pieces
  11. Yogurt-1 Tbs(beaten)
  12. Oil-2 Tbs
  13. Salt-1/4 ts or according to your taste
  14. Coriander leaves(chopped)-1Tbs (for garnish)
Procedure :
  1. Heat 4 Tbs oil in a pan. Add 1/2 chopped onion and fry until tender. Now add all powder and paste from kofta ingredients and stir. Add 1Tbs water and stir until oil comes out by the side of the pan.
  2. Add minced beef and stir for few minutes in medium heat. Add 1/2 cup water and cook until beef become tender and dry.
  3. Remove from the pan to a mixing bowl. Add another 1/2 chopped onion, green chili, bread(bread crumb) and egg yolk. Mix all of them well. Make round shape kofta with your hand.
  4. Heat oil in the pan in medium heat, add kofta into it, wait 2/3 minutes and then flip the other side, and fry both side to a nice brown color. Then take out from oil on a paper towel(kitchen tissue) to soak extra oil.
  5. Heat oil in another pan. Add cinnamon,cardamom and bay leaves. Stir for a while. Add all powder and paste from gravy ingredients and stir in medium heat.
  6. When oil comes out add yogurt and stir. Add 1 cup water and bring it to boil. Put kofta into gravy. Cover the pan and cook for 5 minutes. Then flip the side of kofta. Again Cover the pan and cook for another 5 minutes. 
  7. Now keep it in low heat for few minutes and then turn off the burner.
  8. Place kofta curry in a serving bowl, garnish with coriander leave and serve.

Tehari(তেহারি)

Ingredients:
  1. Beef- 1 kg
  2. Bashmati rice- 1/2 kg
  3. Ginger paste- 2 Tbs
  4. Garlic paste-2Tbs
  5. Onion paste- 2 Tbs
  6. Onion (chopped)-1 cup
  7. Yogurt- 1 Tbs
  8. Cumin powder-2 ts
  9. Garam masala powder- 1 ts
  10. Red chili powder- 1/2 ts
  11. Black pepper powder-1/2 ts
  12. Nutmeg powder-1/2 ts
  13. Green chili- 8-9 pieces or according to your taste
  14. Cardamom-2 piece
  15. Cinnamon- 2 piece
  16. Clove- 2 piece
  17. Bay leaf- 2 piece
  18. Sugar- 1Tbs
  19. Milk-1 cup
  20. Oil- 2/3 cup
  21. Ghee/ Clarified butter- 3 Tbs
  22. Salt-2 ts or according to your taste
  23. Water-approximately 3 cup
Procedure:
  1. Cut beef to a small size like 1 inch cube, clean and wash it well and keep to drain water for 5 minute.
  2. Take beef in a bowl and add yogurt, all paste ingredients(ginger, garlic, onion), powder masala (cumin, red chili,black pepper, nutmeg, garam masala), 3 piece green chili and 1 ts salt, and mix it well.
  3. Now pour oil in the pressure cooker and heat it to a medium heat. Add whole masala (cardamom, cinnamon, clove, bay leaf) and chopped onion and fry until onion turns to golden brown color.
  4. Add marinated beef and stir well. Stir it occasionally until oil start to separate from masala. Add 1/2 cup of water and bring it to a boil, then close the lid and keep it to medium heat for almost 10-12 minutes or 5-6 whistle come out.
  5. Then take out the pressure cooker from the heat to go down the pressure.
  6. Now take a medium large pan, pour 3 cup of water and bring it to a boil. Then add milk, 1 ts salt, sugar, washed rice and rest of the green chili. Then cover it.
  7. Make rice 50% done, then add all the cooked beef with gravy, mix well. Turn the heat to medium low and cover the pan with lid for 5 minute. Then stir the rice again carefully, spread the ghee on the top, cover the pan and keep it on the low heat for around 25-30 minutes. Try to use lid without any hole and cover the pan well. If you want you can seal the lid with flour dough.
  8. Take out the pan from the heat. Uncover it, mix carefully, then spread some fried onion on top of it and serve your tehari hot.

Beef Vindaloo (বিফ ভিন্দালু)


Ingredients:
  1. Beef- 1 kg
  2. Onion(chopped)- 1 cup
  3. Ginger paste-2 Tb
  4. Garlic paste-2 Tbs
  5. Red chili powder- 1 & 1/2 ts or according to your taste
  6. Turmeric powder-1 & 1/2 ts
  7. Cumin powder-1 ts
  8. Coriander powder-1 ts
  9. Garam masala powder- 1 ts
  10. Mustard seed paste- 1ts
  11. White vinegar- 2 tbs
  12. Tomato puree- 1/4 cup
  13. Bay leaves- 2 piece
  14. Cardamom-1 piece
  15. Cinnamon-2 piece
  16. Clove-2 piece
  17. Mustard oil- 2 ts
  18. Clarified butter/Ghee- 4 Tbs
  19. Salt-1 and 1/2 ts or according to your taste
Procedure:
  1. Cut and wash beef. Drain water from beef.
  2. Take beef to a mixing bowl. Add all the ingredients except onion, ghee and whole masala to the beef. Mix all of them very well and keep it marinated around 2 hours.
  3. Heat ghee in a pan. Fry all beef until become brown. Remove beef from the pan and set aside.
  4. Take a pressure cooker and place remaining ghee from the frying pan. Saute bay leaves,cardamom,cinnamon stick and clove around 1 minute in medium heat. Add onion and fry until become light brown.
  5. Add marinated beef and cook until water become fully reduced. Take 2 cup water to the mixing bowl where you marinated the beef.(so that the remaining masala you can add to the beef) Add the water to the beef and bring to a boil. Cover the pressure cooker with lid. Wait for about 5-6 whistle come out or approximately 15-17 minutes.
  6. Turn off the burner and let the pressure cooker to go down pressure by itself.
  7. Serve hot.

Beef with Chana Dal (ছোলার ডালে গরুর মাংস)


Ingredients :
  1. Beef-1 lb(cut into small pieces)
  2. Chana dal/Sola dal-1/2 cup
  3. Onion-1 medium(chopped)
  4. Red chili powder-1 ts or according to your taste
  5. Turmeric powder-3/4 ts
  6. Cumin powder-1 ts
  7. Garam masala powder-1 ts
  8. Coriander powder-1/2 ts
  9. Ginger paste-1 Tbs
  10. Garlic paste-1 Tbs
  11. Oil-around 8 ts
  12. Salt-1 ts or according to your taste
Procedure :
  1. Cut and wash the beef and drain water.
  2. Add all the ingredients except dal,onion and oil to the beef. Mix all the spices well and keep it for 30 minutes.
  3. Heat oil in the pressure cooker. Add onion and stir. When onion become tender add the beef and cook around 15 minutes or until the water become fully reduced. Stir occasionally.
  4. Wash dal and add to the beef. Stir around 1 minute. Add 2 cups warm water and wait until water comes to boil. Cover the pressure cooker with lid. Wait for 3-4 whistle to come out or around 15 minutes.
  5. Turn off the burner and let the pressure cooker to go down pressure by itself.
  6. Enjoy it with roti/parata/luci or rice.

Simple Beef Curry

Ingredients:
  1. Beef - 2 lb
  2. Onion paste- 2 Tbs
  3. Onion (chopped)- 1/2 cup
  4. Ginger paste- 1 Tbs
  5. Garlic Paste -1 Tbs
  6. Turmeric powder - 1 ts
  7. Red chili powder - 1 ts
  8. Garam masala powder- 1 ts
  9. Cumin powder- 1ts
  10. Black pepper -1/2 ts
  11. Cloves - 2/3 piece
  12. Cardamom- 2/3 piece
  13. Cinnamon stick -2/3 piece
  14. Bay leaves -2 piece
  15. Salt - 2 ts
  16. Oil- 1/2 cup
  17. Potato(optional)- 2 medium size(cut one in 4 piece )
Procedure:
  1. Cut your beef in cube or your desire shape, wash it and drain water.
  2. Add all the paste, powder masala and salt (except whole masala and chopped onion), and mix it well. Then marinate it for approximately 1 hour(you can keep 20 minutes if you are in hurry) so that all masala can incorporate in the beef.

  3. Now heat your oil in the pressure cooker to a medium heat, add the whole masala and fry it for 5 seconds, then add the chopped onion and fry until it turns to brown.
  4. Then add your marinated beef and fry it for about 20/30 minutes. Occasionally add little water, but do not add too much water.
  5. Then add your potato and stir it and add approximately 2 cups of warm water and wait till it comes to a boil.
  6. Now close the lid and keep it to a medium heat.
  7. Wait for about 4/5 whistle to come out or approximately 20 minutes.
  8. Turn off the stove and let the pressure cooker to go down pressure by itself.
  9. Then open the lid and serve your dish with rice or ruti/ parata/lucy.
