ReplyDeleteAgree with Anonymous regarding aniseed picture. Also, please note, it has become common habit to refer to tejpata as "bay leaf". This is completely incorrect. The bayleaf and the tejpata (Latin name cinnamomum tejpata) are completely different leaves from different trees from different climatic regions of the world! Also, the bay leaf is much smaller, and has only one vein down the middle. The tejpata has three veins down the middle and is much larger. The practice of using "bay leaf" in deshi cooking has come from the sixties, when everyone was interested in all things Indian, and not finding the tejpata easily in the West at that time, decided to substitute more commonly available bay leaf. Please be the first and most progressive blog to correct this practice of referring to tejpata as bay leaf. It is not.
