Vegetable Biryani (সবজি বিরিয়ানি)


Ingredient:
  1. Basmati rice- 3 cup
  2. Baby corn – ½ cup
  3. Cauliflower – ½ cup
  4. French bean – ½ cup
  5. Carrot – ½ cup
  6. Green pea – 1/2 cup
  7. Coriander leaf – ½ cup
  8. Cashew nut – 10 pieces
  9. Yogurt – 2 tbs
  10. Tomato – 1 (make it paste)
  11. Red chili powder - 1 tsp
  12. Coriander powder – ½ tsp
  13. Cumin powder – ½ tsp
  14. Garam masala powder – around 1 tsp
  15. Ginger garlic paste – 1 tsp
  16. Green chili – 5-6
  17. Oil or ghee – ¾ cup (ghee is preferable )
  18. Turmeric powder – 1 tsp
  19. Dried prune – 5-6 pieces
  20. Salt – 1 and ½ tsp
  21. Whole spice (cardamom,cinnamon,cloves)- 4 pieces
  22. Bay leaf – 2 pieces
  23. Onion paste – 1 tbs
  24. Onion – ½ cup (finely chopped)
  25. Saffron color- a pinch (mix with 1 ts warm water) 
Procedure:
  1. Wash all the vegetable and cut them into cube size. Then fry each vegetable separately in little ghee  with salt & turmeric powder for few min and keep them aside.
  2. Now wash the rice and keep it in strainer to drain the water. Boil around 6 cups of water in a large pan. Then add the washed rice along with all the whole spices & salt in the water. Cook the rice until it is almost done(around 80%). Then drain the excess water from the rice through a strainer and keep it aside.
  3. Heat ghee in a heavy bottom pan. Add chopped onion and fry until it become golden brown in color. Remove half of the fried onion in a bowl.
  4. Put all the paste, powder masala and tomato paste into pan; and fry them until oil comes out.
  5. Now add the yogurt (Tips) and blend it well with the spices.
  6. Then add the cashew nut and all vegetable;  and carefully mix them to coat the vegetable nicely with the masala. Add little water and then cover the pan with a lid. Let them cook for around 5-6 minutes or until the vegetable become tender.
  7. Add half of the chopped coriander leaf and cook for another minute in low heat.
  8. Now remove half of the vegetable from the pan and start layering the rice and vegetable for biryani. First add half of the cooked rice on the veggie of the pan, spread few coriander leaf, green chili, fried onion & dried prune on the rice. Then add the remaining veggie (which has removed from the pan) on it and then add the rest of the rice on top of the veggie.
  9. Add saffron color and ghee on the rice and cover the pan tightly so that no steam can come out. Now let it cook for around 10 minute on very low flame. 
  10. Before serving, carefully mix the biryani from the bottom to top to make an even mix of vegetable and rice.
  11. Now serve your vegetable biryani hot with kabab or egg korma or anything you like to surprise your guest.
Tips:
Before adding the yogurt into any kind of hot masala mix, bit it with a form in a separate bowl. Otherwise it may become lumpy and will not blend nicely in the  masala.

Kacci Biryani(কাচ্চি বিরিয়ানি)


Ingredients:
  1. Mutton-1 kg
  2. Bashmati rice- 1/2 kg
  3. Potato(cut in cube) - 3 medium size(around 250gm)
  4. Onion - 1 cup(chopped)
  5. Yogurt - 1 cup
  6. Milk- 1 cup
  7. Cinnamon stick -4 pieces
  8. Cardamom-5-6 pieces
  9. Clove-3-4 pieces
  10. Bay leaf- 4 pieces
  11. Garlic paste-1 and 1/2 Tbs
  12. Ginger paste- 1 and 1/2 Tbs
  13. Garam masala powder- 1 ts
  14. Cumin powder- 1 ts
  15. Red chili powder- 1 ts
  16. Black pepper powder- 1 ts
  17. Nutmeg powder (Jaifol)- 1/2 ts
  18. Mace powder (jaiotri)- 1/2 ts
  19. Aloobukhara/Dried prune-7-8 pieces
  20. Raisin -10 pieces
  21. Keora water-1/2 Tbs
  22. Sugar-1 ts
  23. Ghee- 1/2 cup
  24. Oil- 2 Tbs
  25. Salt- 2 Tbs or according to your taste
Procedure:
  1. Clean and wash the mutton properly and keep them on a strainer to drain the excess water.
  2. Now take the mutton in the pan (try to use an ovenproof  heavy pan with heavy lid), add yogurt, salt, sugar, half of the ghee, ginger paste, garlic paste, whole masala (cinnamon, cardamom, clove, bay leaf) and all powder masala. Mix all these things well with mutton, cover it and keep it aside to marinate for around 2-3 hour.
  3. In the mean time fry the potatoes lightly in oil and keep it aside. Then fry the chopped onion till it get nice golden color and take them out on a paper towel to soak extra oil and keep aside.
  4. Wash rice and cook it half and drain through a strainer to drain water.
  5. Now add milk on the top of the mutton and then spread the rice on it.Then spread the fried potatoes , fried onion, rest of the ghee, aloobukhara/Dried prune, raisin, keora water one by one on the top.
  6. Then cover the pan with lid. If the lid is not tight enough, seal the edge with flour dough.
  7. Now preheat the oven to 375 degree F. Then put the pan in the oven and bake it around 20 minutes and then  reduce the heat to 350 degree F and bake it around 45-50 minutes.
  8. Then turn off the oven and leave it for around 30 minutes.
  9. Now carefully open the lid and slowly mix the biryani from the bottom to top to make an even mix of mutton and rice in the biryani.
  10. Serve your biryani hot and enjoy.

Chicken Biryani(চিকেন বিরিয়ানি)



Ingredients :
  1. Chicken-2 lb (cut into medium size pieces)
  2. Basmati rice-2 cup
  3. Onion-2 medium(chopped)
  4. Red chili powder-1 Tbs or according to your taste
  5. Garam masala powder-2 ts
  6. Cumin powder-2 ts
  7. Coriander powder-1 ts
  8. Ginger paste-1 and 1/2 Tbs
  9. Garlic paste-1 and 1/2 Tbs
  10. Cardamom-4-5 pieces
  11. Cinnamon stick-4 pieces
  12. Bay leaves-4 pieces
  13. Aloobukhara/Dried prune-2 piece
  14. Nutmeg(Jaifol)-1 ts (paste)
  15. Mace(jaiotri)-1/6 ts (paste)
  16. Yogurt-1 and 1/2 cup
  17. Ghee-2 Tbs
  18. Oil-around 8 Tbs
  19. Salt-2 ts or according to your taste
*If all the ingredients are not available to you can
use ready biryani masala mix.
Procedure :
  1. Cut and wash chicken. Drain water from chicken.
  2. Add red chili powder, garam mashala powder,cumin powder,coriander powder,ginger paste,garlic paste,jaifal,jaiotri,yogurt and 1 ts salt to the chicken and mix all of them very well. Leave it for marinate around 1 hour.
  3. Wash the rice. Take 5 cup water in a deep pan and bring the water boil. When the water become boil add rice,2 pieces cardamom,2 pieces cinnamon stick,2 pieces bay leaves and 1 ts salt.
  4. Cook the rice until 3/4 is done. Drain and keep aside.
  5. Heat oil in a pan. Add 1 chopped onion and fry until deep golden brown. Remove the fried onion from the pan and keep aside.
  6. Add the rest of whole garam masala into the pan and stir around 1 minute. Add marinated chicken. Cook it in medium heat around 25-30 minutes or until chicken become tender.
  7. Take a heavy bottom pan and spread alternate layers of chicken and rice. Carefully end it with rice layer and spread ghee top of the rice.
  8. Cover the pan with lid. If the lid is not tight seal the edge with flour dough.
  9. Cook it in low flame around 20-25 minutes. Turn off the burner and leave it for another 20 minutes.
  10. Spread the fried onion over the biryani.

Mutton Biryani (মাটন বিরিয়ানি)



Ingredients :
  1. Mutton-1 kg
  2. Bashmati rice-500 gm
  3. Yogurt-1 cup
  4. Onion-3 medium (fried)
  5. Ginger paste-2 Tbs
  6. Garlic paste-2 Tbs
  7. Cardamom-9 pieces
  8. Cinnamon-3 stick
  9. Clove-4 pieces
  10. Green chili-4 pieces
  11. Red chili powder-2 ts
  12. Turmeric powder-1 Tbs
  13. Coriander powder-1 ts
  14. Cumin powder-1 ts
  15. Lime juice-2 Tbs
  16. Saffron-1 pinch
  17. Coriander leaves-3 Tbs chopped(optional)
  18. Ghee-2 Tbs
  19. Oil-1 cup
  20. Salt

Procedure :
  1. Clean and wash mutton properly, drain water.
  2. Place mutton into a bowl. Add all the ingredients except rice,ghee and 1/2 of fried onion. Mix all of them properly and keep it marinate for 2 hours.
  3. Take water into a deep pan. Add 1 Tbs oil and salt. When water boils well put rice in the pan and cook the rice half. Remove from the pan and drain water.
  4. Place the mutton in a pressure cooker and cook it until 2 whistle come out.

  5. Take a heavy lid pod. Place mutton bottom of the pan. Spread half cooked rice in the top of the mutton. Add rest of half fried onion.
  6. Prepare the mixture of the saffron with 2 Tbs water.
  7. Spread ghee and saffron on the top of the rice.
  8. Cover the pod with lid. If the lid is not tight, seal the edge with dough. Cook for 15 minutes in medium heat. Then cook another 10 minutes in low heat.
  9. Turn off the burner and leave it for 30 minutes.
  10. Before serve, mix them well.

Shrimp Biryani(চিংড়ি বিরিয়ানী)



Ingredients:

  1. Bashmati rice- 2 cup
  2. Shrimp - 1 lb
  3. Coconut milk -2 cup
  4. Warm water -4 cup
  5. Onion (chopped)- 1 cup
  6. Tomato (cut in cube)- 2
  7. Ginger paste -1 ts
  8. Garlic paste - 1 ts
  9. Green chili - 4/5 piece
  10. Cloves - 3 piece
  11. Cardamom -3 piece
  12. Cinnamon stick -3 piece
  13. Bay leaves -2 piece
  14. Garam masala powder -1/2 ts
  15. Cumin powder -1/2 ts
  16. Red chili powder -1 ts
  17. salt -1&1/2 ts or your choice
  18. Oil or Ghee - 2 Tbs
Procedure:
  1. Wash the rice, drain water and then keep it aside.
  2. Pour oil or ghee in a pan and heat it to a medium heat. When oil is hot put all the whole masala in it and fry for 4 -5 second. then add the onion and fry it until it turns to brown color.
  3. Now add the ginger and garlic paste and fry little bit. Then add the shrimp and tomato, and stir it.
  4. Add little bit water and put all the powder masala and salt and stir it and then add the rice and fry it for 3-4 minutes.
  5. When a nice flavor start to come out add the coconut milk and stir it carefully.
  6. After 4-5 minutes add the warm water and wait until it start to boil.
  7. Then taste the salt and cover it, and keep it to a medium low heat(approximately 30-35 minutes). Stir it 1 or 2 times.
  8. When the rice is done turn off the heat and cover it for another 8-10 minutes.
  9. After that your delicious shrimp biryani is ready to serve.

Hot Fish Biryani (মাছের বিরিয়ানী)

Ingredients :

1. Fish (Rohu or your choice) - 600gm
2. Basmati rice - 2 cup
3. Turmeric powder - 1 tea spoon
4. Hot red chili powder -2 tea spoon
5. Cumin powder - 1 tea spoon
6. Ginger paste - 1 table spoon
7. Garlic paste - 1 table spoon
8. Onion - 2 medium(chopped)
9. Cardamom - 10 pieces
10. Cinnamon stick - 5/6 pieces
11. Whole cloves - 5/6 pieces
12. Oil
13. Ghee
14. Salt

Procedure :

1. Clean and wash the fish properly. Add 1 tea spoon turmeric powder, half tea spoon red chili powder and salt to the fish. Mix properly.

2. Heat oil in the pan. Fry and remove from the pan. Remove bone from the fishes and keep aside.
3. Wash the rice, cook until rice almost done. Then drain water and rinse under cold running water until the water runs clear. Set aside.

4. Put oil on the pod. Add chopped onion. Stir and add the rest of the ingredients.( You may add some peas).If you don't want hot, reduce the amount of hot red chili powder. Stir 2 minute in medium heat. Add 1 cup water. After boiling water add the boneless fish and cover with lid. Cook until gravy become thick. Remove it from the pan.
5. Take a heavy pod with lid. Put some melted ghee bottom of the pot. Put a layer of rice, then add a layer of fish. Repeat and finish off with the rice layer. Add some ghee top of the rice. Cover it with lid and turn the heat low. Wait around 30 minutes.

Now ready your hot fish biryani. Before serve mix properly. If you want better taste, serve it hot.
