Dry Fish Vuna (শুঁটকি ভুনা)


Ingredients:

  1. Dry fish- 100 gm (here I used churi Shutki)
  2. Garlic (chopped)- 2 Tbs
  3. Onion (chopped)- 1/4 cup
  4. Tomato (chopped)- 1/4 cup
  5. Green chili- 3-4 pieces
  6. Red chili powder- 1/2 ts
  7. Turmeric powder- 1/4 ts
  8. Cumin powder- 1/4 ts
  9. Coriander powder- 1/4 ts
  10. Oil- 3 Tbs
  11. Salt- 1/2 ts to or taste
  12. Coriander leaf (chopped)- 1 Tbs 

Procedure:

  1. Saute the dry fish in a pan for 3-4 minutes and then boil them in water for around 3-4 minutes.
  2. Drain the water through a strainer. Then break the fish with hand. If you want you can remove the fish bone.
  3. Now heat the oil in a pan. Add the chopped garlic and fry them for few seconds. Then add the chopped onion and fry until onion become tender.
  4. Add the chopped tomato, green chili, red chili powder, turmeric powder, cumin powder, coriander powder and salt. Fry them until oil start to come out from masala.
  5. Then add the boiled fish and mix them with masala for few minutes. Add little water and cover the pan. Cook it for around 5 minutes.
  6. Then uncover the pan and cook it for another few minutes to reduce all the water.
  7. Add the chopped coriander leaf and stir. Then turn of the heat.
  8. Serve with white rice  or khicuri.

Fish Finger

Ingredients:
  1. Fish fillet-500 gms
  2. Turmeric powder- 1/4 tsp
  3. Red chilli powder -1/2 tsp 
  4. Cumin powder -1/2 tsp
  5. Coriander powder -1/2 tsp
  6. Ginger-Garlic powder -1 tsp (you can use paste instead of powder)
  7. Garam masala powder - 1/2 tsp
  8. Lemon juice from -1/2 lemon
  9. Salt -1tsp
  10. Besan/ Gram flour - 3 tbs
  11. Bread crums - 3 tbs
  12. Oil - for deep fry
Procedure:
  1. Wash the fish fillet and dry the water using paper towel. Then cut them into finger size strips.
  2. Add lemon juice & all ingredients (except besan, bread crumbs and oil); and mix well. Then keep it to marinate for 15-30 minutes.
  3. Now mix basen and bread crumbs in a plate, deep the fish into it to coat and then put on a plate. Coat all the strips like that. 
  4. Heat oil in a pan in medium heat. Fry the fish strips until golden brown color come out.
  5. When all fish fingers are done, serve hot with ketchup.

Fish Shami Kabab


Ingredients:
  1. Chana dal- 1 cup (soaked in water for overnight)
  2. Tuna fish (142g/5oz can)- 4 (same amount of any other fish fillet can be used)
  3. Bay leaf - 2 pieces,
  4. Cloves - 2 pieces
  5. Cinamon - 2 pieces
  6. Cardamom - 2 pieces
  7. Turmeric powder - 1/4 ts + 1/4 ts
  8. Cumin powder -1/2 ts + 1/2 ts
  9. Red chili powder -1/2 ts + 1/2 ts
  10. Garam masala powder - 1 ts
  11. Salt- 1/2 ts + 1/2 ts
  12. Chopped onion - 1 cup
  13. Chopped green chili - 3 Tbs
  14. Ginger paste - 1 Tbs
  15. Garlic paste - 1 Tbs
  16. Chopped coriander - 2 Tbs
  17. Egg - 2 + 1 (separated)
  18. Shan Lahori fish masala - 2 Tbs (optional)
  19. Oil - 2 Tbs
  20. Oil - For deep fry
Procedure :
  1. Wash the soaked dal. Then put them in a pan, add around 3 cups of water and put the pan on the burner to boil. Add the whole masala (bay leaf, cloves, cinnamon, cardamom), half amount of turmeric powder, cumin powder, red chili powder, garam masala powder and salt. Boil it until the dal becomes soft and no water remains in it.
  2. Now grind the dal to make a fine paste and keep it aside.
  3. Heat 2 Tbs oil in a pan. Add the chopped onion in the oil and fry them until the onion starts to become light brown in color. 
  4. Then add the ginger paste, garlic paste and chopped green chili, and fry them for a few seconds. Now add the mashed fish in the pan and add all the remaining masala (remaining half of turmeric powder, cumin powder, red chili powder, garam masala powder and salt). Keep stirring the fish and fry the fish until it dries up (around 5-6 minutes).
  5. Now take the mashed dal and fried mashed fish in a large bowl. Add the whole 2 egg and 1 egg yolk (save the egg white in a bowl), Shan lahori fish masala, chopped coriander and mix them well.
  6. Make small round flattened ball from the mixture and keep them aside to fry.
  7. Pour the oil in a deep pan and heat it in a medium heat. Now take one flattened ball, dip it in the egg white (which we saved earlier) and carefully put it in the oil. Put another 4 or 5 balls in the oil in the same way and fry the both sides of them until a nice brown color comes out. (Remember not to hurry during frying, otherwise the inside will not be fried well).
  8. Now take out the kabab on the paper towel to soak the excess oil. Fry the remaining kabab and serve them warm.

Mashed Fish and Garlic(মাছ রসুনের ভর্তা)


Serves:4-5 persons

Ingredients:
  1. Tilapia fillet-2 piece medium (you can use any other fish fillet or boneless fish)
  2. Garlic cloves-12-15 (chopped)
  3. Onion-1/2 cup(chopped)
  4. Green chili-5-6 pieces chopped or according to your taste(you can use whole or crushed red chili)
  5. Turmeric powder-1/2 ts
  6. Red chili powder-1/2 ts
  7. Coriander leaves-2 Tbs chopped(optional)
  8. Mustered oil-around 3 Tbs
  9. Salt-1 ts or according to your taste
Procedure:
  1. Add turmeric powder, red chili powder and 1/2 ts salt to the fish fillet. Mix well and keep it aside for 10 minutes.
  2. Heat oil in a pan. Add fish and fry both side until light brown color comes out.Remove from the pan and set aside.
  3. Add chopped onion,garlic,1/2 ts salt and green chili to the remaining oil in the pan. Fry until onion and garlic become soft. Add fried fish and stir. Break the fish while stirring. Fry around 3-4 minutes. Remove from the pan. Add coriander leaves and mix well. You can make small round ball before serve.

Mashed Shrimp (চিংড়ি ভর্তা)


Ingredients:

  1. Medium size shrimp-12-15 pieces
  2. Chopped onion-2-3 Tbs
  3. Green chili-2 (chopped)or according to your taste
  4. Turmeric powder-1/4 ts
  5. Red chili powder-1/4 ts
  6. Mustard oil -2 Tbs
  7. Salt-1/2 ts or according to your taste

Procedure:

  1. Remove skin from the shrimp. Wash and drain water. Add turmeric powder, red chili powder and salt to the shrimp and mix well. Keep it aside.
  2. Heat oil in the pan. Add chopped onion and green chili. Fry until onion become nicely tender. Remove from the pan and set aside. Add shrimp to the pan and fry around 3-4 minutes in medium heat.
  3. Remove from the pan and put the shrimp, fried onion and green chili to a chopper or a blender. Chop them. (do not chop or blend too finely).
  4. Place it to a serving bowl and enjoy with plain white rice.(before serving taste the salt)

Koi Fish With Garlic and Peas(রসুন-মটরশুটিতে কই মাছ)

Ingredients:
  1. Koi fish-5 pieces(around 600 gm)
  2. Onion-1 medium(chopped)
  3. Onion-3 Tbs(paste)
  4. Turmeric powder-1ts
  5. Red chili powder-1/2 ts
  6. Cumin powder-1/2 ts
  7. Garlic cloves-15-16 pieces
  8. Garlic paste-1 ts
  9. Green chili(slited)-6-7 pieces or according to your taste
  10. Peas-1/2 cup
  11. Oil- around 1/2 cup
  12. Salt-1 and 1/2 ts or according to your taste
Procedure:
  1. Clean and wash fish. Add 1/2 ts turmeric powder,red chili powder and 1 ts salt to the fish. Mix gently.
  2. Heat 4 Tbs oil in a pan. Add fish and fry both side of the fish. Remove from the pan and set aside.
  3. Heat remaining oil in a pan. Add chopped onion and fry until tender. Add rest of the ingredients and stir  around 2-3 minutes in medium heat. Add 1 cup water and bring it to boil. Add fish and cover the pan with lid. Cook until gravy become thick.
  4. Remove from the pan and serve.

Dried Latia Fish Curry(লটিয়া শুঁটকির তরকারী)

Ingredients:
  1. Dried Latia fish-50gm
  2. Potato- 2 medium size(cut in cube)
  3. Italian Green beans-50 gm(cut into 1 inch size pieces)
  4. Tomato - 1 medium size(cut in 4 pieces)
  5. Onion paste-4 ts
  6. Garlic paste- 2 ts
  7. Ginger paste - 2 ts
  8. Turmeric powder- 1 ts
  9. Cumin powder- 1 ts
  10. Red chili powder- 3 ts or to your taste
  11. Oil- 1/4 cup
  12. Salt- 1 ts or to your taste
  13. Cilantro (finely chopped)- 1 Tbs spoon (optional) 
Procedure:
  1. Cut the fish into about 1 inch size pieces. Soak the pieces into warm water for around 10 minutes and the wash it and drain the water. Cut the potatoes in the cube sizes, green beans to around 2 inches size pieces and tomato to 4 pieces.
  2. Heat the oil in a medium heat in a pan. Add all the paste and powder ingredients to the oil, and stir it. When oil starts to separate from the masala put the potato and beans in it and stir it to mix masala with the vegetable.
  3. Now add the fish pieces and stir carefully. You can add little bit water so that masala can not burn out.
  4. Keep all this in medium heat for about 10 minutes. Stir it occasionally (try to stir carefully so that fish pieces can not be broken.)
  5. After that add around 2 cups of warm water to it and bring it to a boil. Cover the pan and wait about 10 minutes. Then add the tomato pieces and cover the pan and cook for another 5 minutes. After that check the potato whether it is cooked or not. If not cook for another few minutes and then spread the chopped cilantro on the curry and turn off the heat.
  6. Server your curry hot with white rice.

Fish Kofta Curry(মাছের কোফতা কারি)

Ingredients:
For kofta:
  1. Big fish piece(like rohu, mrigal)- 500 gm
  2. any fish fillet(salmon,tilapia) can be used
    also can fish like tuna, salmon can be used;
  3. Onion(chopped)-1 cup
  4. Green chili(chopped)-1Tbs
  5. Coriander leaves(chopped)-1 Tbs(optional)
  6. Egg yolk-1
  7. Cumin powder-1/2 ts
  8. Turmeric powder- 1/2 ts
  9. Garam masala powder- 1/2 ts
  10. Salt- 1/2 ts
  11. Soy sauce- 1 Tbs
  12. Bread -1 piece(this is used as binding,so
    you can use bead crumb/
    corn starch/cooked rice
  13. Oil- around 1/2 cup
For Gravy:
  1. Onion paste- 3 Tbs
  2. Ginger paste-1/2 ts
  3. Garlic paste-1/2 ts
  4. Cardamom-2 piece
  5. Cinnamon - 1 stick
  6. Clove-2 piece
  7. Bay leaves- 1 piece
  8. Cumin powder- 1/2ts
  9. Turmeric powder-1/2 ts
  10. Garam masala powder-1/4 ts
  11. Salt-1/4 ts or your choice
  12. Milk- 2 Tbs(or yogurt)
  13. Nut paste-1 Tbs(optional)
  14. Oil- 3 Tbs
  15. Coriander leaves- 1 Tbs(for garnish)
  16. Fried onion- 1 Tbs(for garnish)
Procedure:
  1. Take 1 Tbs oil in a pan and lightly fry fish on both side(if can fish is used frying is not necessary). Cool it down, remove bone and then mash.
  2. Now fry chopped onion to the light brown color in the pan and add with the mashed fish.( this will give a nice aroma in your kofta)
  3. Add all other kofta ingredients except oil and mix well. If necessary add binding substance(bread crumb/corn starch/cooked rice/flour) and make round kofta.
  4. Heat oil in the pan to a medium heat, add kofta into it, wait 2/3 minutes and then flip the other side, and fry both side to a nice brown color. Then take out from oil on a paper towel(kitchen tissue) to soak extra oil.

    (you can bake your kofta instead of frying. Preheat oven to 350 degree F, spray oil on the baking tray, place kofta on it and put the tray into oven, bake it for about 20/30 minutes. Flip the side on the middle of time and occasionally check, if nice brown color come out turn off the oven ).
  5. Now make gravy for the kofta. Heat oil in a medium heat, saute the whole masala(cardamom, cinnamon, clove, bay leaves). Add onion paste, garlic paste, ginger paste, salt and all other masala and stir the mix well. When oil separate from the mix add milk and stir. Add 1/2 cup of water and bring it to a boil.
  6. Then put the kofta into the gravy and cover it for 4 minute, then flip to the opposite side of kofta, cover, wait another 5 minutes and then turn off the stove.
  7. Pour the kofta curry in the serving dish, garnish with coriander leaves and fried onion, and serve.

Catfish Curry


Ingredients :
  1. Skinless catfish-5 pieces
  2. Onion-1 medium(chopped)
  3. Green chili-4 pieces or your choice
  4. Tomato-1 small(cut into 8 pieces)
  5. Turmeric powder-1 ts
  6. Red chili powder-1/2 ts
  7. Ginger paste-1/2 ts
  8. Garlic paste-1/2 ts
  9. Cumin powder-1/2 ts
  10. Oil-around 3 Tbs
  11. Salt-1 ts or your choice
Procedure :
  1. Clean and wash the fish. Add 1/2 ts turmeric powder,1/2 ts red chili powder and 1/2 ts salt to the fish. Mix gently.
  2. Heat oil into a pan. Add fish and fry lightly. Remove fish from the pan and keep aside.
  3. Add chopped onion to the oil. Stir. When the onion become soft add green chili,1/2 ts turmeric powder,ginger paste,garlic paste,cumin powder and salt. Stir in medium heat around 1 minute. Add tomato and again stir. When oil comes out by the side of the pan add 1 cup water and cover it with lid.
  4. When water boil, reduced and become half add fried fish.
  5. Cook in low heat around 5 minutes. When it looks gravy turn off the burner.

Small Fish with Pumpkin (মিস্টিকুমড়ায় ছোটমাছ)

Ingredients:

  1. Small fish(keski/batashi)-200gm
  2. Pumpkin(cut or grated in medium size)-200gm
  3. Onion(chopped)-1 cup
  4. Garlic(chopped)- 1 Tbs
  5. Tomato(chopped)-1/2 cup
  6. Turmeric powder-1/2 ts
  7. Red chili powder-1/2 ts
  8. Cumin powder-1/2 ts
  9. Green chili- 2/3 piece(optional)
  10. Coriander leaves (chopped)-1 Tbs(optional)
  11. Salt-1ts
  12. Oil-4 Tbs
Procedure:
  1. Wash fish properly, then add 1/4 ts of turmeric powder and 1/4 ts of salt, and mix well.
  2. Take 1 Tbs of oil in a pan and heat it to a medium flame. Put fish into the oil and fry it lightly and take out it from oil and set aside.
  3. Now add the rest of oil in the pan and heat it. Add chopped garlic to the oil and fry for 5 seconds, then add chopped onion and stir it.
  4. When onion become soft, add turmeric powder, red chili powder, cumin powder, salt and little bit of water, and stir it.
  5. When oil start to separate from mix, add grated pumpkin and stir it for 2 minutes, then add chopped tomato and green chili and stir it.
  6. Now add the fried fish, and carefully mix with the vegetable and masala. Do not stir too much otherwise curry will be mashed.
  7. Add 1/2 cup of water and bring it to a boil, then cover it for 4/5 minutes in a medium low heat.
  8. Spread the coriander leaves on the top, cover it and turn off the burner.
  9. Enjoy your curry with white rice.

Keski Fish-Curry(কাচকি মাছের তরকারী)

Ingredients:

  1. Keski fish- 300gm
  2. Onion(chopped)- 1 cup
  3. Garlic-3/4 cloves
  4. Tomato-1 medium size
  5. Green chili-2/3 piece(optional)
  6. Coriandar leaves(chopped)-1/4 cup(optionaal)
  7. Turmaric powder-1/2 ts
  8. Red cili powder-1 ts or your choice
  9. Cumin powder-1/2 ts
  10. Salt-1 ts or to taste
  11. Oil-4 Tbs
  12. Water- 1/2 cup
Procedure:

  1. Clean and wash the fish. Then add 1/4 ts of turmeric powder and 1/4 ts of salt, mix it gently and set it aside.
  2. Now chopped your onion, garlic, tomato and coriander leaves.
  3. Heat oil in a frying pan to a medium flame.
  4. When oil is hot, add chopped garlic and fry it for 5 seconds, then add onion and stir it.
  5. If onion start to become soft, add little bit of water and then add rest of the turmeric powder, red chili powder, cumin powder, salt and stir it.
  6. When oil start to separate from the masala add fish and spread it on the pan and wait for 3/4 minutes, then carefully stir it and wait for another 4 minutes.
  7. Add tomato, green chili and water, make it to a boil, then cover the pan and simmer it to a low temparature for 20 minutes.
  8. Then add the coriander leaves and turn off the heat. Cover the pan and wait 3/4 minutes.
  9. Now your fish curry is ready. Serve it with hot rice.

Rohu Fish Curry ( রুই মাছ ভুনা )


Ingredients :
  1. Rohu fish - 400 gm (8-9 pieces)
  2. Tomato-1 large ( cuted into 8 pieces )
  3. Onion paste-3 Tbs
  4. Ginger paste-1 ts
  5. Garlic paste-1 ts
  6. Red chili powder-1 ts or your choice
  7. Turmeric powder-2 ts
  8. Cumin powder-1/2 ts
  9. Garam mashal powder-1/2 ts
  10. Bay leaves-2/3 pieces
  11. Oil for frying and cooking
  12. Salt-1 Tbs or your choice
Procedure :
  1. Clean and wash fishes. Add 1 ts turmeric powder, 1/4 ts red chili powder and 1/2 Tbs salt to the fish. Mix gently.
  2. Heat oil in the pan and fry the fish lightly. Remove them from the pan and keep aside.
  3. Heat oil again (if needed add a little oil). Add bay leaves and onion paste, stir and add the rest of the ingredients. Mix all of them very well.
  4. Add a little water. When the oil comes out from the mashala add fried fish pieces. Cover the pan. Let it come to the boil.
  5. Reduce the heat and simmer for 2-3 minutes.
  6. Transfer to a serving tray and serve it hot.

Hot Fish Biryani (মাছের বিরিয়ানী)

Ingredients :

1. Fish (Rohu or your choice) - 600gm
2. Basmati rice - 2 cup
3. Turmeric powder - 1 tea spoon
4. Hot red chili powder -2 tea spoon
5. Cumin powder - 1 tea spoon
6. Ginger paste - 1 table spoon
7. Garlic paste - 1 table spoon
8. Onion - 2 medium(chopped)
9. Cardamom - 10 pieces
10. Cinnamon stick - 5/6 pieces
11. Whole cloves - 5/6 pieces
12. Oil
13. Ghee
14. Salt

Procedure :

1. Clean and wash the fish properly. Add 1 tea spoon turmeric powder, half tea spoon red chili powder and salt to the fish. Mix properly.

2. Heat oil in the pan. Fry and remove from the pan. Remove bone from the fishes and keep aside.
3. Wash the rice, cook until rice almost done. Then drain water and rinse under cold running water until the water runs clear. Set aside.

4. Put oil on the pod. Add chopped onion. Stir and add the rest of the ingredients.( You may add some peas).If you don't want hot, reduce the amount of hot red chili powder. Stir 2 minute in medium heat. Add 1 cup water. After boiling water add the boneless fish and cover with lid. Cook until gravy become thick. Remove it from the pan.
5. Take a heavy pod with lid. Put some melted ghee bottom of the pot. Put a layer of rice, then add a layer of fish. Repeat and finish off with the rice layer. Add some ghee top of the rice. Cover it with lid and turn the heat low. Wait around 30 minutes.

Now ready your hot fish biryani. Before serve mix properly. If you want better taste, serve it hot.

Shrimp With Tomato (চিংড়ি টমেটো)


Ingredients :
1. Shrimp-1lb
2. Onion-2 large(chopped)
3. Tomato-1 large (cutted into 6-8 pieces)
4. Turmeric powder- 1 tea spoon
5. Red chili powder -1 tea spoon or your choice
6. Ground cumin- half tea spoon
7. Ginger paste- half table spoon
8. Garlic paste- half table spoon
9. Oil
10. Salt

Procedure :
1. Put 1/2 teaspoon turmeric powder,1/2 teaspoon red chili powder and salt to the shrimp. Mix well. Heat oil in the fry pan and fry all shrimp lightly. Then remove them from the pan.
2. Heat oil in the pan. Add chopped onion. Stir. Then slowly add the rest of the ingredients except tomato. Cook it in medium heat. Now add tomato and stir. Add 1/2 cup water. Cover the pan with lid. After boiling the water give the shrimp.

3. Cook it 5/6 minute in medium heat. Now ready to serve.
