Nargesi Kofta (নারগেসি কোফতা)

Serves 4 people.

Ingredients:
For Kofta:
  1. Ground meat (chicken/ beef)- 1 cup
  2. (**Tips: Try to use the meat with no
    fat to make ground meat and grind
    them 2-3 times so that it become
    soft and sticky.Otherwise the kofta
    will breakdown during frying.)
  3. Hard Boiled egg - 2
  4. Ginger paste- 1/2 ts
  5. Garlic paste- 1/2 ts
  6. Cumin powder- 1/2 ts
  7. Red chili powder- 1/2 ts
  8. Garam masala powder- 1/2 ts
  9. Tomato Sauce - 2 ts (optional)
  10. Green chili (finely chopped)- 1 ts
  11. Green onion (finely chopped)- 2 ts
  12. Coriander leaf (finely chopped)- 2 ts 
  13. Salt- 1 ts or to your choice
  14. Oil- for deep fry




For Gravy:
  1. Onion (chopped)- 1/4 cup
  2. Bay leaf- 1 piece
  3. Cinnamon- 1 stick
  4. Cardamom- 2 pieces
  5. Black cardamom- 1 piece
  6. Onion paste- 1 Tbs
  7. Ginger paste- 1/2 Tbs
  8. Garlic Paste- 1/2 Tbs
  9. Tomato paste- 1/2 cup
  10. Almond/ Cashew paste- 1/2 Tbs
  11. Cumin powder- 1/2 ts
  12. Red chili powder- 1/2 ts
  13. Garam masala powder- 1/2 ts
  14. Mace powder- 1/4 ts
  15. Nutmeg Powder- 1/4 ts
  16. Salt - 1 ts or to your taste
  17. Keoda water- 3/4 drop (optional)
  18. Sugar- 1 ts
  19. Milk- 1/4 cup
  20. Oil- 1/4 cup
  21. Ghee/Clarified Butter- 1 Tbs
  22. Green chili (slit in the middle)- 2 pieces 
Procedure:
  1. Take the Ground meat in a mixing bowl and add all the kofta ingredients except egg and oil. Mix them well and set aside to marinate for around half an hour.
  2. Now take half amount of ground meat mixture and flatten it in your palm like a cutlet. Put one hard boiled egg in the center and wrap the meat tightly around it. Repeat this with the other egg and meat. Refrigerate the kofta for around 2-3 hours.
  3. Heat oil in a deep-fryer or large saucepan. When oil is heated enough, add one kofta carefully in the oil and fry it until the kofta become light brown color and slightly crispy on the outside. It may take 10 to 15 minutes. When it is done take out on a paper tawel to soak the excess oil. Fry the other kofta in the same way.
  4. Now heat 1/4 cup of oil in a pan to make the gravy for kofta. Add the chopped onion and fry them until they become light brown in color.  Then add all the masala (Gravy ingredients from 2-16) and stir them well. When the oil starts to separate from the masala, add 1/4 cup water and stir it. Then cover the pan and let it cook for 5 minutes in medium heat. Now add the milk, green chili and  ghee/ clarified butter in the gravy and stir it well. Then add the fried kofta in the gravy, add the keoda water, sugar and stir it to coat the kofta with gravy. Then cover the pan and let it cook for another 5-6 minutes.
  5. When it is done, take out the kofta from the gravy on a serving dish, carefully cut the both kofta in half and then spread the gravy on top of them. Then serve your Nargesi kofta with Polao or any kind of Biryani.

Beef Kofta Curry(বিফ কোফতা কারি)

Ingredients:
For Kofta :
  1. Minced(keema) beef-250 gmOnion-1 medium(chopped)
  2. Turmeric powder-1/2 ts
  3. Green chili(chopped)-2 Tbs
  4. Cumin Powder-1/2 ts
  5. Garam mashala powder-1/2 ts
  6. Ginger paste-1/2 ts
  7. Garlic paste-1/2 ts
  8. Coriander leaves-1Tbs (chopped)
  9. Breadcrumb -1/2 cup 
  10. Egg yolk-1
  11. Oil-4 Tbs+ 1 cup for fry kofta
  12. Salt-1/4 ts or according to your taste


For Gravy :
  1. Onion paste- 2 Tbs
  2. Ginger paste-1/2 ts
  3. Garlic paste-1/2 ts
  4. Red chili powder-1/4 ts
  5. Turmeric powder-1/4 ts
  6. Cumin powder-1/2 ts
  7. Cardamom-2 pieces
  8. Cinnamon-1 stick
  9. Clove-2 piece
  10. Bay leaves-2 pieces
  11. Yogurt-1 Tbs(beaten)
  12. Oil-2 Tbs
  13. Salt-1/4 ts or according to your taste
  14. Coriander leaves(chopped)-1Tbs (for garnish)
Procedure :
  1. Heat 4 Tbs oil in a pan. Add 1/2 chopped onion and fry until tender. Now add all powder and paste from kofta ingredients and stir. Add 1Tbs water and stir until oil comes out by the side of the pan.
  2. Add minced beef and stir for few minutes in medium heat. Add 1/2 cup water and cook until beef become tender and dry.
  3. Remove from the pan to a mixing bowl. Add another 1/2 chopped onion, green chili, bread(bread crumb) and egg yolk. Mix all of them well. Make round shape kofta with your hand.
  4. Heat oil in the pan in medium heat, add kofta into it, wait 2/3 minutes and then flip the other side, and fry both side to a nice brown color. Then take out from oil on a paper towel(kitchen tissue) to soak extra oil.
  5. Heat oil in another pan. Add cinnamon,cardamom and bay leaves. Stir for a while. Add all powder and paste from gravy ingredients and stir in medium heat.
  6. When oil comes out add yogurt and stir. Add 1 cup water and bring it to boil. Put kofta into gravy. Cover the pan and cook for 5 minutes. Then flip the side of kofta. Again Cover the pan and cook for another 5 minutes. 
  7. Now keep it in low heat for few minutes and then turn off the burner.
  8. Place kofta curry in a serving bowl, garnish with coriander leave and serve.

Fish Kofta Curry(মাছের কোফতা কারি)

Ingredients:
For kofta:
  1. Big fish piece(like rohu, mrigal)- 500 gm
  2. any fish fillet(salmon,tilapia) can be used
    also can fish like tuna, salmon can be used;
  3. Onion(chopped)-1 cup
  4. Green chili(chopped)-1Tbs
  5. Coriander leaves(chopped)-1 Tbs(optional)
  6. Egg yolk-1
  7. Cumin powder-1/2 ts
  8. Turmeric powder- 1/2 ts
  9. Garam masala powder- 1/2 ts
  10. Salt- 1/2 ts
  11. Soy sauce- 1 Tbs
  12. Bread -1 piece(this is used as binding,so
    you can use bead crumb/
    corn starch/cooked rice
  13. Oil- around 1/2 cup
For Gravy:
  1. Onion paste- 3 Tbs
  2. Ginger paste-1/2 ts
  3. Garlic paste-1/2 ts
  4. Cardamom-2 piece
  5. Cinnamon - 1 stick
  6. Clove-2 piece
  7. Bay leaves- 1 piece
  8. Cumin powder- 1/2ts
  9. Turmeric powder-1/2 ts
  10. Garam masala powder-1/4 ts
  11. Salt-1/4 ts or your choice
  12. Milk- 2 Tbs(or yogurt)
  13. Nut paste-1 Tbs(optional)
  14. Oil- 3 Tbs
  15. Coriander leaves- 1 Tbs(for garnish)
  16. Fried onion- 1 Tbs(for garnish)
Procedure:
  1. Take 1 Tbs oil in a pan and lightly fry fish on both side(if can fish is used frying is not necessary). Cool it down, remove bone and then mash.
  2. Now fry chopped onion to the light brown color in the pan and add with the mashed fish.( this will give a nice aroma in your kofta)
  3. Add all other kofta ingredients except oil and mix well. If necessary add binding substance(bread crumb/corn starch/cooked rice/flour) and make round kofta.
  4. Heat oil in the pan to a medium heat, add kofta into it, wait 2/3 minutes and then flip the other side, and fry both side to a nice brown color. Then take out from oil on a paper towel(kitchen tissue) to soak extra oil.

    (you can bake your kofta instead of frying. Preheat oven to 350 degree F, spray oil on the baking tray, place kofta on it and put the tray into oven, bake it for about 20/30 minutes. Flip the side on the middle of time and occasionally check, if nice brown color come out turn off the oven ).
  5. Now make gravy for the kofta. Heat oil in a medium heat, saute the whole masala(cardamom, cinnamon, clove, bay leaves). Add onion paste, garlic paste, ginger paste, salt and all other masala and stir the mix well. When oil separate from the mix add milk and stir. Add 1/2 cup of water and bring it to a boil.
  6. Then put the kofta into the gravy and cover it for 4 minute, then flip to the opposite side of kofta, cover, wait another 5 minutes and then turn off the stove.
  7. Pour the kofta curry in the serving dish, garnish with coriander leaves and fried onion, and serve.
