Egg Halwa (ডিমের হালুয়া)


Ingredients:
  1. Egg- 4
  2. Mawa- 1 cup 
  3. Almond- 40-45 pieces
  4. Milk- 1/4 cup
  5. Sugar- 3/4 cup
  6. Nutmeg powder- 1/4 ts
  7. Saffron/ Food color- 1 pinch (optional)
  8. Ghee/ clarified butter- 4 Tbs + 1 Tbs for brush the pan
  9. Salt- 1 pinch
Procedure:
  1. Take all the ingredients in your blender and blend it to make a smooth paste.
  2. Brush some butter on the pan where you want to set your halwa and keep aside.
  3. Now take the paste in a pan, put it on the burner in a medium heat and start to stir.
  4. Stir the paste continuously until it become thick and start to separate from the side of the pan.
  5. Pour halwa on the greased pan, make the top even as much as possible with the help of a spoon or knife and then keep aside to cool down completely.
  6. Then cut halwa to your desire shape, garnish with some slice of nuts and serve.

Simple Semolina Halwa (সুজির হালুয়া)


Ingredients:
  1. Semolina/Shuji- 1 cup
  2. Sugar- 1 & 1/4 cup
  3. Water- 2 & 1/2 cup
  4. Salt- 1/4 ts
  5. Ghee/ Clarified butter- 6 Tbs
  6. Bay leaf - 1 pieces
  7. Cardamom- 2 pieces
  8. Clove- 2 pieces
  9. Chopped nuts (for decoration) - 1 Tbs (optional)
Procedure:
  1. Take sugar, water, salt, bay leaf, cardamom and clove in a pan and put in the burner to boil. When the syrup start to boil, turn the heat to low and let it simmer for 4-5 minutes.
  2. In the mean time, take shuji in another pan and dry roast it in medium heat until it turns to a light brown color (a nice aroma will spread all over while it is done). Then add the ghee and fry for another 4-5 minutes.
  3. Now carefully add the sugar syrup in the roasted shuji and mix it. Then let it cook for 4-5 minutes or until shuji is cooked and water is reduced (do not make it too dry. When halwa start to spread all over vigorously, then turn off the burner.).
  4. Take the serving plate (the plate should be 2 or 3 inch deep) and carefully pour your halwa in it. Then tap the plate to make the top even. Spread the chopped nuts on the top and keep it aside to cool completely (Tips). 
  5. Then you can serve it plain as a dessert or with Luchi, Parata
Tips:
If you want to serve your halwa as a square shaped or diamond shaped barfi, then place your halwa in the refrigerator after pouring it on serving plate for around 20-25 minutes. Then cut it in your desierd shape to serve.

Date Halwa( খেজুরের হালুয়া)

Ingredients:
  1. Dates-500 gm
  2. Milk-500 ml
  3. Cardamon-3 pieces
  4. Milk powder-1/2 cup
  5. Ghee-1/4 cup
  6. Raisin-15  pieces
  7. Almond-12  pieces
** Usually there is no need to add sugar but if you want more sweet you may add sugar according to your taste.
Procedure:
  1. Remove seed from dates. Soak it in milk for 30 minutes.Blend it in a blender to make a fine paste.
  2. Heat ghee in a pan in medium heat. Add cardamon and fry for few seconds.
  3. Then add dates paste and stir.When halwa start to become thick add milk powder.
  4. Stir continuously until it comes to halwa consistency that do not stick the pan. 
  5. Remove from the pan and garnish with nuts and raisin.

Neshester Halwa (নেশেস্তার হালুয়া)


Ingredients:

  1. Semolina - 2 cup
  2. Water - 5 cup
  3. Sugar - 1/2 cup or to your taste
  4. Salt - 1/4 ts
  5. Clarified butter/ ghee - 1 Tbs
  6. Kewda water - 1-2 drop (optional)
  7. Orange food color - 1/4 ts
  8. Cardamom powder- 1/4 ts
  9. Cinnamon powder - 1/4 ts
  10. Pistachios powder - 1/4 ts (for garnish)
  11. Almond- 2/3 pieces (for garnish)

Procedure:

  1. Soak the semolina in the water for around 3 hours. 
  2. Then strain the water through the cheese cloth in a bowl (remember for this recipe we need the strained water, not the soaked semolina).
  3. Put the pan in a medium heat, pour the strained semolina water into the pan and start to stir. 
  4. Now add salt, sugar, ghee, cardamom powder, cinnamon powder,  food color in the pan one by one and continue to stir.
  5. Continuously stir the halwa until it comes to a halwa consistency (it may take 40-50 minutes or little more).
  6. Spread some oil or ghee on your serving dish where you want to garnish your halwa.
  7. When halwa start to  wrap up from the side of the pan, take it in the prepared serving dish. Spread it nicely on the dish. Garnish the top with pistachios and almond and keep it to cool down.
  8. Cut your halwa to your desire shape and serve.

Raw Papaya Halwa(কাঁচা পেপের হালুয়া)

Ingredients:
  1. Raw papaya-1.5 kg
  2. Sugar-1 cup or according to your taste
  3. Milk powder-1 cup
  4. Ghee- 2 Tbs
  5. Cardamom- 2 stick
  6. Green food color-few drop
  7. Vanilla essence-few drop
  8. Almond for decoration
Procedure:
  1. Peel and cut papaya into small pieces.
  2. Boil papaya with water. Boil it until papaya become nicely tender and water evaporates.
  3. Now mash papaya and make a fine paste. Keep it aside.
  4. Heat ghee in a pan. Add cardamom and stir. After 1 minute add papaya paste and stir.
  5. Now add sugar and stir occasionally. When halwa start to become thick add milk powder and stir continuously.
  6. Prepare the mixture of food color with 2 Tbs water.
  7. Add food color and stir continuously until it comes to a halwa consistency that do not stick to the pan. Add vanilla essence and stir.
  8. Garnish your halwa with some nuts and raisin.

Pumpkin Halwa(মিষ্টি কুমড়ার হালুয়া)



Ingredients:
  1. Pumpkin-400 gm
  2. Sugar-2 Tbs or according to your taste
  3. Ghee-1 Tbs
  4. Food color-few drop
  5. Almond-10 pieces
  6. Raisin-10 pieces
  7. Powder milk-1 Tbs

Procedure:
  1. Wash and peel pumpkin and cut into small size. Boil 1 liter water in a pan in medium heat. Add pumpkin. Boil pumpkin until tender. Drain water.
  2. Place boiled pumpkin in a blender and make paste.
  3. Heat ghee in a pan in medium heat.Add pumkin paste and sugar. Stir it until it get halwa consistency.
  4. When it become almost done add food color.
  5. Add almond and raisin.
  6. Serve according to your desire shape.

Apple's Halwa(আপেল এর হালুয়া)


Ingredients:
  1. Apple-4 pcs
  2. Sugar-1/2 cup or your choice
  3. Ghee-2 Tbs
  4. Milk powder-2-3Tbs
  5. Clove-12 pcs
Procedure:
  1. Wash and peel apple. Cut the apple into small pieces.
  2. Boil around 3 cup water in a pan in medium heat. Add apple and boil it until it become tender.
  3. Place boiled apple in a blender and make paste.
  4. Heat 2 tbs ghee in a pan in medium heat,add apple paste and stir.
  5. Add sugar, milk powder and cook it until oil comes out from the pan. Take out halwa on a plate and cool it down slightly. Then make small balls from halwa. Put cloves in the middle of the ball.
  6. Your delicious halwa is now ready to serve.

Potato Halwa(আলুর হালুয়া)

Ingredients:
  1. Potato- 4 (medium size)
  2. Sugar- 1 cup or your choice
  3. Ghee/Clarified butter- 3 Tbs
  4. Milk -1 cup
  5. Milk powder-2 Tbs
  6. Cardamom powder-1/4 ts
  7. Cinnamon powder-1/4 ts
  8. Almond (chopped)- 2 Tbs+ 1 Tbs(for garnish)
  9. Raisin- 15 pieces
  10. Cocoa powder -1 tsp
  11. Vanilla essence- 1/2 ts(optional)
  12. Salt-1/4 ts

Procedure:
  1. Wash and boil potato in medium heat until it become tender. Allow potato to cool down, peel and mash them.
  2. Heat ghee in a pan in medium heat. Add mashed potato, milk, sugar, cardamom powder and salt, and stir well. Stir occasionally until the mixture start to thicken.
  3. Then add milk powder, almond, raisin and vanilla essence, and stir continuously.
  4. Stir it until ghee separates from the potato mixture. Then carefully divide halwa into 3 portions and take out 2 portions on 2 separate plates. (Remember to spread some ghee on plate so that halwa does not stick on the plate.
  5. Add cocoa powder to the remaining halwa in the pan and mix it well in low heat. Then turn off the heat and take it out on another plate.
  6. Now from the three portion of halwa make 3 thick roti. Then put cocoa powder mix portion on one of the white part and then put another white portion on the top of the cocoa portion. Then press little bit on them so that the three parts can stick together.
  7. Cut it with a knife(you can spread some oil in your knife to cut your halwa smoothly) to your desire shape. Garnish with almond, raisin and serve.

Mango Borfi(আমের বরফি)

Ingredients:
  1. Mango pulp- 2 cup(you can make fresh pulp by blending ripe mango)
  2. Clarified butter/ghee-4 Tbs
  3. Grated coconut- 1 cup
  4. Mawa-1.5 cup(you can use sweet condensed milk(14oz can) instead of mawa)
  5. Sugar-3/4 cup(if you use sweet condensed milk then use sugar to your taste )
  6. Cardamom powder-1/4 ts
  7. Orange food color-1/8 ts(dissolve in 1 Tbs water)
  8. Almond (chopped)-1 Tbs
  9. Salt-1/4 ts
Procedure:
  1. Pour clarified butter/ghee in a pan and heat it to a medium flame. Add mango pulp and stir it. Stir it until moisture evaporate. Then add cardaom powder, salt, sugar and coconut and mix it well.
  2. Add mawa and mix it. Then add food color and stir continuously to mix the color.
  3. Stir and dried the moisture from the mix until it find enough consistency to make borfi from it(this consistency should be thicker than halwa). Add half almond to it and mix.
  4. Now spread some ghee on your serving dish, pour the halwa and flatten it evenly with the back side of a spoon. For nice plane surface also add some ghee or oil on the spoon.
  5. Garnish the top with the rest of the almond and keep it to cool down. Then cut it to diamond or barfi shape and serve.

    Papaya Halwa(পেপের হালুয়া)

    Ingredients :
    1. Ripen papaya-1
    2. Sugar-1 cup(according to papaya's sweetness)
    3. Milk-1 cup
    4. Dry milk powder-4 Tbs
    5. Cardamom-4 pieces
    6. Saffron-1 pinch(optional)
    7. Raisin-10-12 pieces
    8. Almond-10 pieces
    Procedure :
    1. Peel and cut papaya into small pieces.
    2. Boil the papaya with milk. Boil it until milk evaporates and then cool it down and mash it to make a fine paste. Keep it aside.
    3. Heat ghee in a pan. Add cardamom and stir. After 1 minute add papaya paste and stir.
    4. Now add sugar and stir occasionally. When halwa starts to become thick add milk powder and stir continuously.
    5. Prepare the mixture of saffron with 2 Tbs water.And add that to the halwa and stir continuously until it comes to a thick consistency that does not stick on the pan.
    6. Add almond and raisin and mix well.
    7. Then transfer it to the serving dish and garnish with some nuts and raisin. Enjoy!

    Shujir Caramel Halwa(সুজির ক্যারামেল হালুয়া)

    Ingredients:
    1. Semolina/ shuji- 1 cup
    2. Sugar-5 Tbs
    3. Salt-1/8 ts
    4. Milk-1/2 cup
    5. Warm water -1/2 cup
    6. Egg- 1
    7. Clarified butter/Ghee-2 Tbs
    Procedure:
    1. Take 3 Tbs of sugar in pan, add 2 Tbs of water, and heat it to a medium flame. Stir it and round the pan occasionally. Stir until the sugar melt and start to turn into deep brown color, then add the rest of water and boil it one time. Then take out this syrup into a bowl and cool it down to room temperature.
    2. Add milk, sugar, salt, egg into the syrup and beat it well, and set it aside.
    3. Now take a dry pan, put semolina/shuji on it and roast it to a medium low heat. Stir it continuously.
    4. When semolina/shuji turn start to turn to light brown color, add Clarified butter/Ghee and mix it well.
    5. Then add the syrup mix into the semolina/shuji and stir it well, and cover it for 3 minutes.
    6. In the mean time spread some Ghee or oil on the plate where you serve your halwa.
    7. After that uncover the pan, stir it. If it become thick enough, take it to the serving plate, flatten it with the back side of a flat spoon evenly. For the nice plane surface also add some ghee or oil on the spoon.
    8. When done keep it aside to cool down for 20 minutes, then cut it to your desire shape and serve.

    Carrot halwa (গাজরের হালুয়া)

    Ingredients:

    1. Carrot- 1 lb
    2. Water-1 cup
    3. Milk -2 cup
    4. Sugar -1/4 cup
    5. Ghee/ unsalted butter- 2 Tbs
    6. Cardamom-2piece
    7. Cinnamon-1 piece
    8. Bay leaves- 1 piece
    9. Cloves-2 piece
    10. Salt -1/8 ts
    11. Pistachios (chopped) - 1 Tbs
    12. Almond (chopped)- 1 Tbs
    13. Peanut(chopped)- 1Tbs
    14. Raisin -1 Tbs
    Procedure:

    1. Cut your carrot in cube and boiled it in water for 15 minutes. Now cool it down to room temperature and then blend it in a blender. Add 1/2 cup milk with carrot in blender.
    2. Take Ghee or butter in a pan and melted it in a medium heat. Fry all of your nuts and raisin in ghee for 5 seconds, then take out them in a plate.
    3. Now add the whole masala in ghee, fry them for 5 seconds, then pour your blended carrot, milk, sugar and salt into it and stir it.
    4. Keep it to a medium heat. Stir occasionally.
    5. When halwa start to become thick stir continuously until ghee become separate and moisture has been absorbed.
    6. Add nuts and raisin and mix well.
    7. Garnish with some nuts and serve your delicious halwa.
