Egg Jorda (ডিমের জর্দা)


Ingredients:
  1. Egg- 3
  2. Milk powder- 1/4 cup
  3. Milk - 1/4 cup
  4. Sugar- 6 Tbs or to taste
  5. Salt- 1 pinch
  6. Ghee/ melted butter- 6 Tbs
  7. Cardamom powder- 1/4 ts
  8. Cinnamon powder - 1/4 ts
  9. Keoda water- 1 ts
  10. Saffron/ orange food color - 1 pinch
  11. Raisin- 12 pieces
  12. Chopped nuts - 1 Tbs
For Garnish: (optional)
  1. Raisin- 6/7 pieces
  2. Chopped Almond - 1 Tbs
  3. Chopped Date - 1 Tbs
Procedure:
  1. Take all the ingredients except ghee/ melted butter in a bowl and beat them well until the sugar dissolve.
  2. Continue to stir the mix  and add slowly the ghee/ melted butter (if you are using the melted butter, then do not add the hot butter in the mix. Make sure the butter is lukewarm while adding it to the egg mix. Otherwise there will be lump in the egg mix.)
  3. Now take the mix in a pan and put it on a medium heat. Stir the mix continuously until all the water dries out and the egg mixture become lumpy.
  4. Take out the egg jorda on the serving dish. Garnish it and serve warm.

Egg Korma (ডিমের কোরমা)



Ingredients:
  1. Egg-7/8 pieces(hard boiled)
  2. Onion-1 medium(chopped)
  3. Onion paste-2 Tbs
  4. Garlic paste-1/2 ts
  5. Ginger paste-1/2 ts
  6. Green chili-5-6 pieces(whole)
  7. Cumin powder-1/2 ts
  8. Cardamom-4-5 pieces
  9. Cinnamon stick-2-3 pieces
  10. Plain yogurt-2 Tbs
  11. Milk-1/2 cup warm(you may also use coconut milk)
  12. Cashew nut paste-1 Tbs
  13. Sugar-1 ts
  14. Oil-6 Tbs
  15. Salt-1 ts or according to your taste
Procedure:
  1. Heat 2 Tbs oil in a deep pan. Add hard boiled egg and fry a little. Remove egg from the pan and set aside.
  2. Take the yogurt in a bowl and beat it well. Keep that aside.
  3. Add the rest of the oil to the pan. Add cinnamon and cardamom. Stir for a while. Add chopped onion and fry until tender. Add onion paste and stir for few seconds. Add ginger paste,garlic paste,green chili,cumin powder, salt and stir them. Now slowly add the beaten yogurt and cashew nut paste and stir the curry continuously. Fry all of them around 2 minutes in medium heat. Add warm milk and bring it to boil.
  4. Add egg and stir well to coat with all spices. Cover the pan and cook for few minutes in low heat. Add sugar and cook another 2-3 minutes.


     
  5. Now the korma is ready to serve. Enjoy with pulao or biryani.

Simple Egg Pudding(ডিমের পুডিং)

Ingredients:
  1. Milk- 4 cup
  2. Egg- 4
  3. Sugar- 6 Tbs+ 2 Tbs
Procedure:
  1. Boil 4 cups of milk and reduce it to around 2 cups. Then cool it down to room temperature.
  2. In the mean time take 2 Tbs of sugar in a pan, add 1 Tbs of water and heat it in a  medium low temperature to make caramel and then quickly pour it on the pan where you are going to make your pudding, then keep it aside to cool down.
  3. Now add eggs, sugar and milk in your blender and blend it to make a smooth mixture (you can also use a hand mixture to make the mixture). Then pour it in the baking pan where you already poured your caramel (make sure that caramel is fully cooled down, otherwise it will mix with the egg mixture and you won't get the caramel layer on your pudding.)
  4. You can make your pudding in two ways, on your burner or in your oven.
    *** Making on the burner: Take a saucepan large enough to fit your pudding pan. Take some boiling water in the saucepan (take such an amount of water so that  when you will place your pudding pan in the saucepan, half of the pan will be under the water and the pan will not float in the water. You can use a stand to keep the pan steady). Now place the pudding pan in the saucepan and cover both the pan and then keep it in medium heat for around 40-45 minutes (occasionally check the water of saucepan; add more water if needed ).
  5. *** Making on the oven: If you want to bake the pudding, preheat your oven to 350  F, then take a bigger pan than your pudding pan, pour some boiling water in it (take such an amount of water so that  when you will place your pudding pan in the water half of the pan will be under the water and the pan will not float in the water). Now place your pudding pan in it. Cover your pudding pan and then place the pan  in the preheated oven. Bake it for around 45- 60 minutes.
  6. Check your pudding with a knife. Insert it into the pudding; if it comes out clean then your pudding is done. If it seems still liquid or sticky, keep it on burner or in oven for another 5-10 minutes and check again.
  7. When pudding is done keep it to cool down. Then carefully run a knife along the edges of the pan, place a plate on the top of the pan and flip the pan to take out the pudding on the plate.
  8. Your pudding is ready to serve.

    Egg Pitha (ডিমের পানতোয়া পিঠা)



    Ingredients:
    1. Egg-2
    2. Flour-2 cup
    3. Sugar-2 and 1/2 Tbs
    4. Water-1 and 3/4 cup
    5. Salt-1/4 ts
    6. Oil-1 Tbs for egg fry + deep frying
    Procedure:
    1. Mix flour,sugar and salt. Add water and mix well. Keep the batter aside.
    2. Heat 1 tbs oil in a pan in medium heat and make egg fry(ডিম পোঁচ).


    3. Heat Oil in a pan in medium heat for deep fry. Dip fried egg in the batter and put in the heated oil. Fry both side until golden brown.
    4. Remove it from oil to a paper towel to remove extra oil. Again dip it in the batter and fry it. Repeat this process for 4-5 times.


       
    5. Cut with a knife  and serve.

    Egg-Peas Curry(ডিম মটরশুঁটির তরকারি)

    Ingredients:
    1. Egg-4(hard boiled and grated)
    2. Peas-1/2 cup
    3. Tomato-2 large(finely chopped)
    4. Onion-1 medium(chopped)
    5. Green chili-3 (slitted)
    6. Red chili powder-1/2 ts
    7. Turmeric powder-1/2 ts
    8. Cumin powder-1/2 ts
    9. Garam mashala powder-1/2 ts
    10. Ginger paste-1 ts
    11. Garlic paste-1 ts
    12. Cardamom-2 pieces
    13. Cinnamon stick-2 pieces
    14. Bay leaves-1
    15. Oil-around 3 Tbs
    16. Salt-3/4 ts or according to your taste
    Procedure:
    1. Heat oil in a pan. Saute cardamom,bay leaves and cinnamon stick.Add chopped onion and stir until onion become tender.
    2. Add salt, all powder and paste ingredients; and stir around for around 1 minute. Then add peas and tomato and stir.
    3. Add 1/2 cup water and cover the pan with lid. When water become almost reduced and oil start to separate from the masala add grated egg and mix it gently with masala in lower medium heat around 3-4 minutes. Then turn off the heat.
    4. Serve your curry with plain rice or ruti or parata.

      Egg Pulao(ডিমের পোলাও)






      Ingredients:
      1. Basmati rice-2 cup
      2. Egg-5 beaten (for polao)
      3. Egg-2 hard boiled(for garnish)
      4. Tomato-3 medium(chopped)
      5. Onion-3 medium(chopped)
      6. Green chili-5 (whole)
      7. Red chili powder-1 ts
      8. Cumin powder-1 ts
      9. Ginger paste-1 Tbs
      10. Garlic paste-1 Tbs
      11. Cardamom-4/5 pieces
      12. Cinnamon stick-2 pieces
      13. Bay leave-3 pieces
      14. Nutmeg powder-1/2 ts
      15. Coconut milk-2 cup
      16. Food color-1 pinch(dissolve with 2 Tbs water)
      17. Ghee-2 Tbs
      18. Oil- 2ts
      19. Salt-1 and 1/2 ts or according to your taste
      20. Water-around 3 cup
      Procedure:
      1. Wash rice and drain water.
      2. Heat oil in a pan. Saute 1/3 chopped onion. Whisk egg with 1/4 ts salt. Add the whisk egg to the onion and make scrambled. Remove from the pan and keep aside.

      3. Heat ghee in a deep bottom pan. Add bay leaves, cinnamon and cardamom. Stir for a while. Add 2/3 onion and fry until it turns light golden. Add ginger and garlic paste, tomato, salt, all powder ingredients and coconut milk, and stir it until oil separate. Then add rice and mix it carefully with the gravy around 5 minutes.

      4. Add 3 cup hot water,stir. When it start to boil, cover the pan with lid. When the rice is almost done add scrambled egg,toss gently. Add food color and keep it in a very low heat.(If needed you can add little hot water to the rice) 

      5. Cook until the rice gets well cooked.
      6. Slice the hard boiled egg. Garnish and serve.(before serve mix gently)

      Carrot Cheese Omelet




      Ingredients :
      1. Egg-2(beaten)
      2. Carrot-1 medium(grated)
      3. Cheese-2 Tbs(grated)
      4. Onion-1 medium(finely chopped)
      5. Green chili-2 small(chopped)
      6. Garam mashala powder-1/4 ts(optional)
      7. Turmeric powder-1/4 ts
      8. Salt-1/4 ts or according to your taste
      9. Oil-1 ts
      Procedure :
      1. Beat egg well. Add all ingredients except oil and again beat.
      2. Heat oil in a pan. Pour the mixture to the hot oil. Cook both side until get well cooked.

      Egg-Pineapple Curry

      Ingredients :
      1. Pineapple-1
      2. Egg-4 (hard boiled)
      3. Onion-1 medium(chopped)
      4. Red chili powder-1/4 ts
      5. Turmeric powder-1/2 ts
      6. Cumin powder-1 ts
      7. Coriander powder-1 ts
      8. Ginger paste-1 ts
      9. Garlic paste-1 ts
      10. Cardamom-4 pieces
      11. Cinnamon-2 stick
      12. Bay leaf-2 pieces
      13. Coconut milk-3 cup
      14. Sugar-1 Tbs(you may add or less sugar depending to your pineapple sweetness)
      15. Oil- 4 Tbs + 3 ts
      16. Salt-1 ts or according to your taste
      Procedure :
      1. Peel and wash pineapple. Cut into small pieces and set aside.
      2. Heat 1 ts oil in a pan. Add onion,cinnamon and cardamom. Fry until become light brown. Put it in a blender and make paste.
      3. Remove shell from egg. Put 1 pinch turmeric powder and 1/4 ts salt to the egg. Mix well.
      4. Heat 2 ts oil in the pan. Add egg and fry until become golden. Remove from the pan and keep aside.( you may halve them)
      5. Heat 4 Tbs oil in the pan. Add pineapple, onion paste and all other spices and cook for few seconds.
      6. Add 1 cup milk, stir and cover the pan with lid. Cook until oil comes out.(if pineapple is not tender add 1/2 cup water)
      7. Add 2 cup milk and bring it to boil. Add egg and cover the pan with lid.
      8. Cook for 5 minutes. Add sugar and cook additional 5-10 minutes in low heat.
      9. Serve with rice or plain Pulao.
