Cauliflower Fry (ফুলকপি ভাজি)


Ingredients:
  1. Cauliflower (cut in small size pieces)- 2 cups
  2. Black cumin- 1/4 ts
  3. Whole red chili- 2 pieces
  4. Onion (chopped)- 2 Tbs
  5. Grated garlic- 1 ts
  6. Grated ginger- 1 ts
  7. Green chili (chopped)- 1 Tbs
  8. Turmeric powder- 1/4 ts
  9. Cumin powder- 1/4 ts
  10. Salt- 1/2 ts or to taste
  11. Tomato sauce- 1 & 1/2 Tbs
  12. Soy sauce- 1 Tbs
  13. Coriander leaf (chopped)- 1 Tbs
  14. Oil- 3 Tbs
 Procedure:
  1. Heat oil in a pan. When oil is heated enough add the black cumin and whole red chili and let them temper for few seconds. 
  2. Add the grated garlic and ginger and fry them for another few seconds. Then add the chopped onion and fry them for around 1/2 minute.
  3. Then add the cauliflower, chopped green chili, salt, turmeric powder and cumin powder; and stir them carefully to mix them well. Let them cook for around 5-6 minutes (remember to stir occasionally)
  4. When cauliflower looks half done, add the tomato sauce and soy sauce; and mix them.
  5. Then cover the pan and let them cook for around 3-4 minutes or until the cauliflower become soft.
  6. Spread the chopped coriander leaf on the top and turn off the heat.
  7. Enjoy the cauliflower fry with plain rice or ruti or parata.

Crispy Fried Cauliflower (মচমচে ফুলকপি)


Ingredients:
  1. Flour of Cauliflower- 10-12 pieces (cut in 1 inch size)
  2. Rice flour- 4 Tbs
  3. Cornflour- 1 Tbs
  4. Cumin powder- 1/2 ts
  5. Red chili powder- 1/2 ts
  6. Turmeric powder- 1/4 ts
  7. Egg- 1
  8. Soy sauce- 1 ts
  9. Sugar- 1/2 ts
  10. Salt- 1/2 ts + 1 ts
  11. Water- 3 Tbs (To make batter)
  12. Oil- for deep fry
Procedure:
  1. Take rice flour, corn flour,  red chili powder, cumin powder, turmeric powder, 1/2 ts salt and sugar in a bowl and mix it.
  2. Beat the egg in a separate bowl. Add soy sauce and 3 Tbs water; and mix it.
  3. Now add the liquid mixture into the flour mixture and mix it to make a smooth batter. Let the batter to set for 10-12 minutes.
  4. Boil water in a sauce pan. Add 1 ts salt. When the water start to boil, add all the cauliflower pieces and boil them for 5-6 minutes or until the flowers become little bit soft. Then drain the water and set them aside.
  5. Now heat oil in a pan. Take a flower, deep it into the batter and carefully put it into the oil. Fry the flower until a nice brown color come out all over the side (do not hurry during frying, otherwise you will not get the crispiness) and then take it out on a paper towel to soak the excess oil.  Fry all the flowers like that and serve as an appetizer or serve with khicuri.

Cauliflower with Moong Dal(কপি-মুগ)


Ingredients:
  1. Moong dal- 1/2 cup
  2. Cauliflower- around 300 gm/ 0.66 lb
  3. Turmeric powder - 1/2 ts+ 1/2 ts
  4. Cumin powder - 1/2 ts+ 1/2 ts
  5. Red chili powder - 1/2 ts+ 1 ts
  6. Salt - 1/2 ts+ 1 ts or to your taste
  7. Onion(chopped) - 1/2 cup
  8. Garlic paste- 1 ts
  9. Tomato- 1 medium size
  10. Whole green chili- 2-3 pieces
  11. Chopped cilantro- 1 Tbs
  12. Oil- 3 Tbs + 1 Tbs
  13. Whole cumin- 1/2 ts (optional)
  14. Chopped garlic - 1/2 ts (optional)
Procedure:
  1. Dry roast the moong dal for few minutes to get a nice aroma. Then soak the dal in water for about 15-20 minutes.
  2. Now wash the dal and put in a saucepan. Add around 2 cups of water, 1/2 ts salt, 1/2 ts, turmeric powder, 1/2 ts red chili powder, 1/2 ts cumin powder and the whole green chili to the dal. Put the saucepan in a medium heat and let the dal to cook for around 15-20 minutes or until the dal become just soft. 
  3. In the mean time, cut the cauliflower to 1/2 inch size, cut the tomato to 4 pieces and keep them aside.
  4. Now heat 3 Tbs oil in another pan. Put the onion in the oil and fry them until become soft. Then add the garlic paste, cut tomato, rest of the turmeric powder, red chili powder, cumin powder and salt; and stir them to mix. (If it is needed add little water so that your masala do not burn).
  5. Stir the masala until the oil start to separate from the masala. Then add the cauliflower in the pan and stir carefully to coat all the floret with the masala.  
  6. Then carefully pour the cooked dal in the pan, give a stir and cover the pan; and let it cook for around another 15-20 minutes or until the cauliflower become soft.
  7. (This step is optional. If you want you can skip it. This step is to give a nice flavor to the dal) Now heat 1 Tbs of oil in  a pan. Add the whole cumin to the hot oil and fry them for 30 seconds and then add the chopped garlic in the oil and fry for another 30 seconds or until the garlic become light brown in color. Then carefully pour the hot oil along with cumin and garlic in the cooked dal.
  8. Spread the chopped cilantro on the top of dal and cover the pan. Wait for few minutes and turn off the heat.
  9. Your dal is ready to serve. Enjoy with plain rice or ruti/tortilla.

Whole Cauliflower Curry(আস্ত ফুলকপি ভুনা)



Ingredients:
  1. Cauliflower-1 medium
  2. Tomato-2 medium(chopped)
  3. Green peas-1 cup
  4. Onion-2 cup(finely chopped)
  5. Turmeric powder-3/4 ts
  6. Red chili powder-1 ts or your choice
  7. Garlic paste-1 Tbs
  8. Cumin powder-1 ts
  9. Oil-around 5 Tbs
  10. Salt-2 ts or according to your taste 
Procedure:
  1. Wash and remove the outer green portion of the cauliflower. Boil in a deep large pan around 10-15 minutes in medium heat. Add 1 ts salt while boil. Turn off the burner and do not remove the lid. Allow it to cool.
  2. Heat oil in a large pan. Add onion and fry until tender. Add the rest of the ingredients and fry around 2-3 minutes. Add little water and bring it to boil. Add cauliflower to the pan. Carefully handle the cauliflower while transferring. Spread the gravy over cauliflower and cover the pan with lid. Cook in lower medium heat around 10 minutes. (Tips)


  3. Then serve the curry with khicuri or plain polao.
Tips:

  1. You can fry the boiled cauliflower in little oil before cooking it.
  2. You may also bake the cauliflower. After boiling place the cauliflower in a baking dish. Gently spread the gravy over the cooled cauliflower. Bake it in electric oven at 400 degrees for 20-25 minutes.
