Vegetable Tortilla Samosa(সবজি সমুচা)

Ingredients:
  1. Mexican flour tortilla-6-8 
  2. Cabbage-3 cup(chopped)
  3. Carrot-2 cup(grated)
  4. Mixed vegetable(beans,peas,corn)-1 cup
  5. Onion-1 medium(chopped)
  6. Red chili powder-1ts or according to your taste
  7. Turmeric powder-1/2 ts
  8. Cumin powder-1 ts
  9. Ginger paste-1 ts
  10. Garlic paste-1 ts
  11. Tasting salt-1/2 ts
  12. Salt-1 ts or according to your taste
  13. Oil-5 Tbs + oil for deep fry
** To seal the edge mix 2 Tbs flour with 4-5 Tbs water.
** You can make your stuffing on your own choice.

Procedure:
  1. Heat 5 Tbs oil in a deep pan. Add onion and fry until tender. Add all vegetables,salt,powder and paste ingredients. Stir for a while.
  2. Cook in lower medium heat until vegetable become tender and all liquid evaporated. Add tasting salt and stir. Remove from the pan and set aside.
  3. Take a tortilla and microwave it for 10 seconds.Cut it from middle and fold in half. Spread some flour paste on the corner of the tortilla with your finger.(see the picture.) Then again fold it. (make a cone)Fill  the cone with your stuffing. Seal the edges with flour paste and set aside. Cover it with slightly wet paper towel to make sure they won't dry up.
  4. Heat oil in a pan.Fry until both side turns golden brown. Remove from the pan and keep it on a paper towel to soak extra oil.
  5. Serve hot.

Bread Pakora(পাউরুটির পাকোড়া)


Ingredients:
  1. Bread-6 pieces
For Potato Mixture:
  1. Potato-2 medium(boiled and peeled)
  2. Red chili powder-1/2 ts
  3. Cumin powder-1/4 ts
  4. Coriander powder-1/4 ts
  5. Salt-1/2 ts or according to your taste
For Besan batter:
  1. Besan-3/4 cup
  2. Red chili powder-1/4 ts
  3. Turmeric powder-1/4 ts
  4. Garam masala powder-1/4 ts
  5. Salt-1/4 ts or according to your taste
  6. Water-around 3/4 cup
** Oil for deep fry

Procedure:
  1. Put besan in a bowl. Add red chili powder,turmeric powder,garam masala powder and salt. Mix them well. Add water and make a smooth batter (batter will not be too thin or too thick). Then cover the bowl and set aside for 15-20 minutes.
  2. Mash the boiled potato well. There should not be any lumps. Add red chili powder(you can also use green chili instead of red chili.), cumin,coriander powder and salt to the potato. Mix all of them well and set aside.
  3. Trim the edges of the bread. Put two bread together and cut into your desired shape.
  4. Take one piece bread and spread potato mixture on it. Put another same shape bread on it, then take bread slices between two hand and press.
  5. Heat oil in a pan. Dip one stuffed bread into the besan batter at a time and put it into the oil. Fry until both side turns golden brown.

Korola Fry with Potato & Shrimp(আলু,-চিংড়ি দিয়ে করল্লা ভাজি)

Ingredients:
  1. Korola(beater melon)-2 medium(thinly sliced)
  2. Potato-1 medium(grated)
  3. Shrimp-10-12 pieces(medium)
  4. Onion-1 medium(chopped)
  5. Green chili-5/6 pieces or according to your taste(slited from middle)
  6. Turmeric powder-1/2 ts
  7. Oil-around 6 Tbs
  8. Salt-1 ts or according to your taste
Procedure:
  1. Clean and wash shrimp and set aside.
  2. Spread a little salt to the korola and mix well. Keep it for 5 minutes then wash it.(it helps reduce bitter)
  3. Heat oil in a pan. Add onion and green chili and stir until onion become tender.
  4. Add shrimp and fry for a while. Add potato,korola,turmeric powder and salt. Stir well to mix all of them.
  5. Cook in medium heat until potato and korola become tender. Stir occasionally to prevent burn bottom of the pan.
  6. Serve with plain white rice.

Shami Kabab (শামি কাবাব)


Ingredients:
  1. Chana dal-1 cup
  2. Beef keema -400 gm
  3. Egg-2(beaten) 
  4. Ginger paste-1 ts
  5. Garlic paste-1 ts
  6. Cumin powder-1 ts
  7. Coriander powder-1 ts
  8. Garam masala powder-1/2 ts
  9. Red chilli powder-1/2 ts
  10. Cardamom-4 pieces 
  11. Cinnamon-1 stick
  12. Onion paste-2 ts
  13. Copped onion-2 ts
  14. Chopped green chili-5 pieces
  15. 9
  16. Bread crumb-around 1 cup
  17. Chopped coriander leaf-1/2 cup
  18. Salt-1and1/2 ts or according to your taste
  19. Oil-1 cup for deep fry
Procedure:
  1. Clean and wash beef keema and chana dal. In a heavy bottom pan put beef keema,chana dal,ginger paste,garlic paste,onion paste,cinnamon,cardamon,salt and water.Cook until the chana dal and meat become well cooked and the water is completely dried up.
     
  2. Grind the cooked ingredients to make a fine paste.
  3. Put the paste in a mixing bowl.Add rest of the ingredients to it except oil and mix well.
  4. Make small round flattened balls from the mixture.
  5. Heat oil in a pan in medium heat. Deep the kabab in the beaten egg and carefully put in oil. Put another 4-5 kababs in the same way and fry them till golden brown color come out in both side.
  6. When frying is done take out the kabab in a paper towel to soak excess oil.
  7. Now Shami kabab is ready to serve. Serve it hot.
